How to Make a Star Biscuit Christmas Tree
Decorated biscuits are a big thing this Christmas, from ornately decorated to clean and simple, as long as it’s festive anything goes!
These star biscuit Christmas trees are an incredibly versatile bake, you can stack six stars to make a small tree or 12 to make a large tree, perfect for Christmas day nibbles! Alternatively you could decorate each star individually with different coloured ready to roll icings, and perosnalise them as gifts for your loved ones. One things for sure they won’t hang around for long!
Makes 2 trees (12 biscuits)
- 100 grams/4 ounces of soft butter
- 75 grams/3 ounces of caster sugar
- One egg yolk
- 200 grams/7 ounces of plain flour
- Half a teaspoon of mixed spice or vanilla essence

- 500 g of Renshaw Ready to Roll Icing in Pastel Green »
- Small Ball of White Renshaw Ready to Roll Icing »
- Dr Oetker Soft Silver Pearls »
- Small quantity of Royal Icing (approximately 1 tsp.)
1. Cream the butter and sugar together with a wooden spoon until pale and creamy.
2. Beat in the egg yolk and sift in the flour and spice (you may not need all of the flour).
3. Bring the dough together with your hands and wrap in cling film to chill in the fridge for half an hour.
4. Heat your oven to 180 degrees C.
5. Roll out the chilled dough to five millimetres thick and cut out two of each size star so you have 12 biscuits altogether.
Top Tip! When you have cut out all of the stars and laid them on the trays, put them back into the fridge to chill for 15 minutes – this will help to prevent the biscuits spreading when in the oven.
6. Bake on parchment lined baking trays for 7 to 12 minutes or until the edges are just starting to brown. Remove from the trays with a palette knife and leave to cool completely on a cooling rack before decorating.
How to Decorate
1. For each biscuit, roll out the green icing to approx three millimetres thick and use the same size cutter to cut out a star of icing. Use a clean paintbrush to lightly brush the back of the icing star with a little cooled, boiled water and carefully lay it onto the biscuit and press gently to attach.
2. Repeat with all 12 of the biscuits.
3. Leave all of the iced biscuits on a rack for two hours or overnight for the icing to dry out and harden.
4. You can decorate your tree with silver balls – attach them to the points of the stars with a small dot of royal icing.
5. Then your biscuits are ready to stack! Start with the largest sized star and layer them up into a tree shape, staggering each one as you go. Or, alternatively you could stack all 12 biscuits to make one large tree. Simply start with the largest stars on the bottom and then layer them on top of each other working up in size to the smallest stars on the top.
Alternatively, you can decorate your iced biscuits by piping Royal icing using a medium writing nozzle. Whilst the icing is still wet, sprinkle liberally with coloured glitter and tip off the excess.
