 We don’t always have real snow around at Christmas time, and even the fake stuff is not so fun – so why not bake it! This simple snowball cake is easy to create, and the dessicated coconut helps hide any imperfections really well, so you get a great result every time.

How to Make a Snowball Cake

Skill Level: Beginner

Allow: Two and a half hours, plus cooling time

You will need

For the buttercream & coconut topping

  • 250 g butter, softened
  • dash of vanilla extract
  • 600 g icing sugar
  • 2 tbsp milk
  • 200g dessicated coconut

How to Make

  1.  Heat your oven to 150°C. Place half the cake ingredients in your mixer and mix until the mixture is smooth and flowing. Pour into the greased cake tin and bake for approximately 1 hour until cooked in the middle. Allow the cake to cool in the tin and then remove, placing it on a wire rack. Repeat this process with the second half of the ingredients.
  2. When both cake halves are baked and cool, carefully slice one of them in half, essentially taking off the top half of the cake. Spread the two halves of this cake with lemon curd, creating a sandwich.Then spread on the top of the cake too and put the other whole cake half on top.
  3. To make the buttercream, cream all the ingredients together in the mixer hard and fast until it looks slightly fluffy. Spread the buttercream all over the outside of the assembled cake, including the sides. Sprinkle and cover with the dessicated coconut.
