How to Make a Christmas Cake

It’s time… now is the best time to get making your Christmas cake, if you’re looking to make a traditional fruit cake! You need to allow time to let the cake mature, and feed it regularly, to create the perfect fruit cake. Don’t worry about decoration yet, this comes later – just make sure the actual cake is ready to be fed!

Cake serves 15 to 20.

You Will Need
  • 225g dark brown sugar
  • 200g unsalted butter
  • 560g mixed dried fruit
  • 110g whole glace cherries
  • 1½ tablespoons orange zest
  • 110ml orange juice
  • 110ml brandy
  • 110g ground Almonds
  • 95g toasted pecans roughly chopped
  • 4 medium eggs
  • 225g plain flour
  • ¾ teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 ½ teaspoon mixed spice

How to Make

1.  Preheat oven to 140 degrees centigrade. Grease and double line tin. Prepare a double layer of baking parchment in an 8” circle to rest on top of cake during cooking. Wrap tin loosely in brown paper and secure with string.

2. In a large saucepan, add sugar, butter, dried fruits, zest, juice and brandy and bring to the boil, stirring occasionally. Simmer for 20 minutes on low heat until fruits are plump and juicy. Remove from heat and allow to cool.

3. Add nuts, eggs, flour and spices to cooled fruit and mix well. Fill prepared cake tin.

4. Bake for 2 to 2 ½ hours at 140 degrees C or until a cocktail stick comes out clean. Allow to cool completely in the tin.

5. Once cooled wrap cake in double layer of baking parchment and cover in foil. The cake will keep for up to 8 weeks prior to decorating.
