Bake a batch of cookies, half of which have a heart shaped hole in the centre.
Roll a quantity of white sugarpaste to approximately 3-4mm thickness. TIP: Work on greaseproof paper to make picking up the icing shapes easier.
Use the same round cookie cutter you used for the cookies to cut a circle of icing for each sandwich.
Repeat with the red and pink icing.
Moisten the outer .5cm of each icing disc with water on both sides before gently but firmly sandwiching between each pair of cookies (Be sparing with the water!)
